Mom wanted to do stir fry. Soy sauce was all out, and the stir fry sauce we had was expired by two months (yeuch.)
So she tossed chicken into the pan and turned the fire on, then wandered off... again.
I brought it down to medium and hit it with an assortment of spices, but the damage was done. It came out bland and unremarkable.
Same thing for the veggies, she'd essentially done the same thing. So I mixed up a sauce that was mostly butter and drenched the works.
This elevated the dish, and mom was quite impressed.
I remember several years ago watching an interview with Anthony Bourdain, where he recounted a story about cheating in culinary school. He said the secret to a good meal is salt, and a shitload of butter.
How do you use butter? Heavily? Sparingly? Avoidant-ly?
I've known people who refuse to use it in any way, and people who use nasty coconut substitutes, so let me know, just how do you use butter?
-
it depends.
if its a bagel I will drench it in salty butter.
if its for cooking fried eggs I might go a little over board
when I cook instant rice or regular I will use butter
in veggies I will use butter.
If I add or cook with butter it is usually unsalted.
Our supermaket sells this irish butter I'm not sure what makes it irish(maybe the cows?) but its pretty good.

Salted butter melts poorly. At the same time, I'll marinate meat ahead of time if possible. Butter isn't helping the bottom line when it comes to health.
-
Salted butter for me. Never had a problem melting it. ???

Maybe it's just land o lakes? Man golly land o lakes.

It's wonderful flavoring on foods that would otherwise be good for you.

I use butter on sandwiches. EVOO in cooking, for me.
Edit: That's two posts in a day. I am going to go and lay down in a darkened room somewhere.
And I thought your posts in the food section would be related to Apples. :D

I don't think it's Land O Lakes 8ully. I grew up eating that brand. It's as good as any in my opinion.
-
are you using land of lakes in the tub or the stick butter?
-
I'll never buy either again, but it was the tub at the time.

the tub butter isn't very good, it usually has hydronated oils in it. Butter should only have two ingredients cream and salt.
whipped butter is good to
