Poached Eggs.

Today was the day that I attempted to make poached eggs.  It wasn't that diffcult and they actually were easy to make and way better than fried eggs.

Now you're ready for Eggs Benedict. Poached eggs with Canadian bacon on an English muffin with cheese sauce.

When you master the art of a roux, all milk based sauces are a doddle.
Don't put off until tomorrow, what you can put off until the day after.

There is an exception to every rule, apart from this one.

Try putting a teaspoon of cream cheese into the pan with the egg when you poach it, assuming you are using an egg poacher (the kind with little cups for the eggs that are suspended above water.)  It renders them even richer and more delicious.
