mac and cheese with hamburger.

I used adobo seasoning. I bought this off MANY internet recommendations that it would be fantastic. I tasted it and was not impressed.

Thankfully it cooked okay, and was not as horribly salty as I assumed.

I also ground in some cheddar to add creaminess to the mac and cheese and it got the dinner where it was going.

It did in fact bring the creamy.

I don't know if I've mentioned it previously, but one of the reasons the box mac became so lousy is they removed buttermilk powder from the dry sauce packet. The noodles remain blameless.

Mac n cheese boxes are usually cheap.  Annies isn't bad, but I think the Safeway store brand was also decent.  It's probably easier to make the sauce (butter, flour, milk and some cheese) and toss it in the cooked pasta at the end.  It's basically poor man's alfredo sauce, no?  I suspect if you make it from scratch it will be more satisfying and cheaper.

I blackened some salmon last night and had roast asparagus with it.  They turned out ok for a change.  I'm not the most skilled at pan frying fish, but that was it.  A simple dinner and filling.

It's kind of a roux? I know that's a word that makes my mom livid. She will not in fact "First, make a roux". But it is fun to poke her with.

On a discussion on another platform it was pointed out to me that "white people tacos" are essentially deconstructed hamburgers, and by jove, I think that's correct.

I've got a chub of meat defrosting and will finally make the goya chopped cheese recipe, which literally starts with chopping up hamburgers.

Tonight was boring. Frozen pizza. But it was... okay. Definitely not something worth a love letter, but it was filling and I didn't overconsume.

You know, when you asked about roux, I got confused as to what is roux and how it differs from bechamel sauce. I think I was advocating the latter.  Roux is flour plus fat, so generally, butter with some flour added and the two mixed go into something to thicken it.

Bechamel has butter, flour and milk, so you can mix that up and throw in cheese and whatever flavorings.  I guess alfredo sauce doesn't have flour.  I used to make chicken pot pies with leftover rotisserie chicken.  I'd make bechamel sauce (no cheese) to layer between the vegetables and chicken in the homemade layers of crust.  It was back breaking work.  I'd make multiple individual pies and then freeze them.  They'd bake in an hour and they were really good.  Not ideal diet food, though.  I'd make them with sauteed mushrooms and then also cook some frozen peas, along with sauteed onion, celery and carrot.  I had a bunch of those small aluminum pie plates, like the ones that come from commercially sold frozen pot pies.  I used to be more ambitious and my back didn't complain quite as much as it does now from the continued exertion.  Making the crust was also a real pain, as I'd have to mix it up, roll it out and then cut it for bottoms and tops of the pies.  I think if I split the crust making and the guts into two days it would have been easier.

Last night I had some spaghetti with jarred pasta sauce, so that was relatively easy, although I did grate some pecorino romano to go with it.
