Banana Bread - anyone have a good recipe for it?

I have some bananas that are starting to ripen and I've decided I wanted to make banana bread. before googling a recipe I'm hoping someone here has a recipe that they dont mind sharing . :)

I make banana cake sometimes and make mine to a sort of Victoria sponge recipe with added banana. It's kind of heavier that way and a bit more bread like.

Banana cake is in my Top-10 most favourite things in the multiverse.
Don't put off until tomorrow, what you can put off until the day after.

There is an exception to every rule, apart from this one.

I've never done a banana bread. I've done a German/Brazilian banana cake once that's to die for! It's quite moist so probably not what you're looking for. If you still want the recipe I'll translate it for you.

Thanks XT I would love to have recipe banana cake is good too. I was kind of hoping for a breakfasty sort of banana bread.

Never had banana foster before.

I check here and the den and find the same thread title @_@

Nothing odd about that, but its very odd that at pretty much the same time (within a half hour), my mother asked me to google for a recipe to print out for her for banana nut bread ...

Anyone else find the timing strange?? O_O


Anyway, we are pretty simple when it comes to baked goods, I printed this:

This is a moist, buttery banana bread loaded with banana flavor. Here's a large photo of this banana bread recipe.



Cook Time: 1 hour, 15 minutes
Total Time: 1 hour, 15 minutes
Ingredients:

    * 1 cup butter or margarine
    * 2 cups sugar
    * 4 eggs
    * 1/4 teaspoon salt
    * 2 teaspoons soda
    * 4 cups flour
    * 6 large bananas, very ripe, mashed
    * 1 cup finely chopped pecans (or walnuts)

Preparation:
Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped pecans.

Pour banana nut bread batter into 2 well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 2 loaves.

yeah I just figured I'd try to get as many results as possible. That recipe sounds and looks good and I do have that many bananas. I think I'll add some chocolate chips instead of nuts.

Here is a simple version of what my mother used to make.  She always made dough that sat for a day or so though.  That was the old way, I think.  I found you a timely fashioned version :D

As promissed:

This recipe is from Southern Brazil where there's a big German immigration.
It's called CUCA DE BANANA CON FAROFA (Cuca coming probably from "kuchen").



For the dough:

* 1/2 cup of sugar
* 1 spoon (soup) of baker's yeast
* 1 cup of milk
* 1 cup of warm water
* 1 spoon (soup) of margarine or butter
* powdered cinnamon
* lemon or orange zest
* 500 g of flour

- Mix the sugar, yeast, milk and water and let it rest for 5-10 min.
- Add the egg, margarine/butter, cinnamon and lemon zest.
- Add the flour and knead until it doesn't stick to your fingers but it's moist.
- Let it leaven till it grows.

For the top:

* 6 bananas
* sweetened condensed milk (Brazilians add this to many desserts but it's optional really).
* 3 spoons (soup) of margarine or butter
* 500 g of sugar
* 500 g of flour
* powdered cinnamon
* lemon or orange zest

- In a bowl bring together the butter/margarine, sugar, flour, cinnamon and lemon zest.
- Mix with your hands to make a crumble.
- Cut the bananas (typically they do it diagonally but of course you can do it any way you want)
- Grease a pan in which you can fit the dough and put it there when it's leveaned.
- Cover the dough with the bananas, then the sweetened condensed milk and then the crumble.
- Cook in a preheated oven at medium heat for about 25 min. This can vary depending on the size of the pan i.e. if you decided to make it thicker or flatter. Also don't try to golden the cobbler much or the bottom of the cake will be too brown.
